Red Velvet Beet Cupcakes


  • ½ scoop Revive Beets + Roots
  • ¼ cup Lemon juice
  • 1 ¼ cup All-purpose flour
  • 1 ½ tsp. Baking powder
  • 2 tbsp. Cocoa powder
  • ¼ tsp. Salt
  • 1 ¼ cup Sugar
  • 1 ½ tsp. Vanilla extract
  • ⅓ cup Cooking oil

What you will need: Cupcake or muffin oven tray and cupcake liners.



First, preheat your oven to 400 degrees Fahrenheit. Next, grab a large mixing bowl. Add in all of your dry ingredients first, then your wet ingredients. Once all ingredients are added in mix until smooth. You may use a hand mixer if you choose to mix your batter that way, or whisk on your own. Once batter is smooth, fill in your cupcake tins about ¾ full to avoid spillage and just enough to fluff the cupcake. Next put it in the oven and bake for 30 minutes. Once cupcakes are done, let them cool for a few minutes then frost or serve without icing.
*We used Simple mills vegan vanilla frosting to frost our delicious red velvet beet cupcakes.
