Cucumber Tomato Salad

  • 1 cucumber medium (leave the skin on) 1-2 roma tomatoes
  • Baby spinach or kale mix
  • Balsamic vinegar
  • Olive oil
  • Lemon wedges
  • Himalayan salt and pepper 


Cut cucumber and tomatoes into medium cubes. Toss spinach and kale mix with cut cucumbers and tomatoes. Drizzle with olive oil and balsamic vinegar. Once on the plate served, add a touch of salt, fresh cracked black pepper and a small squeeze of lemon as desired.
