Bunless Bison Burger with Watermelon Fennel Salad

Bison Patty Ingredients:

Watermelon Fennel Salad Ingredients:

  • 1 lb ground bison
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 whole large egg
  • Salt and pepper
  • 4 tomato slices
  • Butter lettuce
  • Thin sliced red onion as desired
  • 1 cup watermelon cubes
  • 1/2 fennel bulb shaved thin
  • Spinach and kale mix
  • Lemon juice
  • Balsamic vinaigrette (see recipe on previous page)

Cooking Direction:

Mix all ingredients for the bison patty into a large mixing bowl except tomatoes, red onions and butter lettuce. Combine but do not over mix. Make 4 patties and cook to desired doneness (grill or sear) In another mixing bowl, toss spinach and kale mix with watermelon cubes, shaved fennel, lemon juice and a pinch of salt. Plate salad and drizzle with balsamic vinaigrette and fresh black pepper. Next to the salad, place 2-3 butter leaves down with the bison patty directly on top. Garnish with tomatoes and red onions (optional).
