    Strawberries are low in carbs and high in fiber. These coconut strawberry chia balls make the perfect melt-in-your-mouth quick snack. The beauty of these is that a little goes a long way, but if you feel like eating another there is nothing to feel guilty about, go for it!

     

    Makes 16 servings - Prep time: 20 minutes - Cook time: 1 hour to refrigerate

     

    Ingredients:

    1 scoop Pineapple Chia Cleanse

    1 scoop Vegan Vanilla Proteini

    Unsweetened finely shredded coconut

    1 cup coconut butter

    1 cup coconut oil

    1/2 cup frozen or fresh strawberries

    1 teaspoon monk fruit (optional)

     

    Directions:

    1. - Place shredded coconut on a plate and set aside.
    2. - Add Pineapple Chia Cleanse, Vegan Vanilla Proteini, coconut butter, coconut oil, strawberries, and monk fruit in a food processor and blend until creamy and smooth, about 3 minutes.
    3. - Cool the mixture in the refrigerator for 30 minutes, or until the mixture thickens.
    4. - Spoon out about 2 tablespoons at a time and shape into balls. Roll in coconut to cover. Chill in the refrigerator for about 1-2 hours and enjoy!
