Vegan-friendly Valentine's Day Recipes

That’s why we’ve made 3 easy to follow Vegan-friendly recipes to make your Valentine’s Day healthy, delicious, and satisfying. Starting with breakfast, a side to enhance your lunch, and a healthy dessert to end your night just right.

  

Proteini Heart-shaped Waffles

Ingredients:

1 cup All-purpose flour

¼ cup Oats

¼ tsp. Salt

2 tsp. Cocoa powder

1 tsp. Cinnamon 

1 cup Almond milk

Flax egg

2 large ripe Bananas

2 ½ tsp. Baking powder

1 scoop Vegan Vanilla Proteini

1 can Coconut oil spray


What you will need: Heart-shaped or regular waffle iron.

Instructions:

First, grab a large mixing bowl and add in all of your dry ingredients.
Next, use a small bowl to mix your egg replacer.
Once your egg replacer is ready, add in all of your wet ingredients into your large mixing bowl that contains your dry ingredients. Don’t forget about mashing your bananas! 
Then, stir all ingredients until smooth. Allow batter to rest while your waffle iron heats up.
Finally, once your waffle iron is heated, spray the iron evenly with coconut oil spray, and pour in your batter. When your waffle iron flashes green, waffles are ready to be served!

Sweet Beet Hummus

 

Ingredients:

½ scoop of Revive Beets + Roots

2 15oz. Cans of Chickpeas

2 large Garlic cloves

1 large Lemon

6 tbsp. Tahini

1 tsp. Salt

2 tbsp. Olive oil

1 tsp. Cumin


What you will need: Food Processor.

Makes 3 cups.


Instructions:
Make sure you drain your can of Chickpeas before throwing them into the food processor. Once drained, throw in all of your ingredients into your food processor and blend until smooth.
Once done, pour into a tub or container and refrigerate or serve immediately.
 
Red Velvet Beet Cupcakes

 

Ingredients:

½ scoop Revive Beets + Roots

¼ cup Lemon juice

1 ¼ cup All-purpose flour

1 ½ tsp. Baking powder

2 tbsp. Cocoa powder

¼ tsp. Salt

1 ¼ cup Sugar

1 ½ tsp. Vanilla extract

⅓ cup Cooking oil

 

What you will need: Cupcake or muffin oven tray and cupcake liners.

 

Instructions:
First, preheat your oven to 400 degrees Fahrenheit. Next, grab a large mixing bowl. Add in all of your dry ingredients first, then your wet ingredients. Once all ingredients are added in mix until smooth. You may use a hand mixer if you choose to mix your batter that way, or whisk on your own. Once batter is smooth, fill in your cupcake tins about ¾ full to avoid spillage and just enough to fluff the cupcake. Next put it in the oven and bake for 30 minutes. Once cupcakes are done, let them cool for a few minutes then frost or serve without icing.
*We used Simple mills vegan vanilla frosting to frost our delicious red velvet beet cupcakes.
