Seared Salmon with Sautéed Seasonal Veggies

Seared Salmon Ingredients:

  • Two 6-7 oz. salmon filets (boneless and skinless) 

  • Salt, pepper, and lemon juice

  • Coconut oil

  • Seasonal veggies

  • Any choice of veggies you like

  • Minced garlic

Seasonal Veggies:

  • Stay away from root veggies. Ideal veggies: 

  • Mushrooms

  • Squash

  • Zucchini

  • Bell peppers

  • Eggplant

  • Spinach

  • Sugar snap peas

  • Salt, pepper, and lemon juice

Season salmon filets with salt and pepper. Heat 2 skillets, one for salmon and the other for the veggies. Sauté veggies first with garlic and season with salt, pepper, and lemon juice. About halfway through the veggies being cooked, sear salmon on each side till desired doneness. Once done, squeeze fresh lemon juice on top of salmon.
