Light Mediterranean Salad

This light and hardy Mediterranean salad is the perfect dish to fill you up without leaving you bloated and full afterwards. Pair it with a bowl of your favorite soup and enjoy!

1/2 head romaine lettuce, chopped

1/2 avocado, cubed

1 ounce pitted black olives, chopped

1/2 thinly sliced small radish

1 tablespoon extra virgin olive oil

1 tablespoon fresh lemon juice

2 teaspoons chopped fresh oregano, or 1/4 teaspoon dried

Sea salt to taste



- Combine the lettuce, avocado, olives, and radish in a medium sized bowl.

- In a small bowl, whisk together the oil, lemon juice, oregano, and salt.

- Drizzle the oil mixture over the vegetables and toss to combine. Serve and enjoy immediately!
