    Try out this unique variation of the classic Waldorf salad using kale instead of lettuce, and adding apples and walnuts into the dressing for a creamy consistency without using mayonnaise, perfect for vegans!

     

    Makes 4-6 servings - Prep time: 10 minutes - Cook time 5 minutes

     

    Ingredients:

    4 cups kale, finely chopped

    1 large red apple, chopped

    3 large stalks celery, thinly sliced

    1/2 cup roasted walnuts, chopped

    1/4 cup + 2 tablespoons raisins

    2 tablespoons Dijon mustard

    1 tablespoon red wine vinegar

    1/8 teaspoon sea salt

     

    Directions:

    1. - Place the kale into a large bowl. Add half of the apple along with the celery, 1/4 cup walnuts (keeping the other 1/4 for the dressing), and 1/4 cup raisins (keeping the other 2 tablespoons for the dressing).
    2. - Add the remaining apple, walnuts, and raisins into a blender, along with the Dijon mustard, 2 tablespoons of water, vinegar, and sea salt. 
    3. - Blend the dressing until well combined, smooth, and slightly thick, adding water if needed to thin further.
    4. - Pour the dressing over the salad, blend to combine, and enjoy!
