1 small grapefruit, peeled and sectioned
1 cup arugula
1 cup copped romaine or butter lettuce
1/4 teaspoon finely chopped fresh ginger
1 tablespoon extra virgin olive oil
1/2 avocado, sliced
1/4 cup chopped fresh cilantro
- Combine grapefruit, arugula, romaine, and ginger in a bowl.
- Drizzle with the oil and toss to coat.
- Top with the avocado and cilantro, and enjoy immediately!
