    This deliciously fresh Asian-inspired salad is the perfect balance of nutty, sweet, and acidic with a kick of spicy ginger!

     

    Makes 4 servings - Prep time: 15 minutes - Cook time: 8 minutes

     

    Ingredients:

    3 cups cooked wild rice

    3 tablespoons green onion, sliced

    1/4 cup carrot, shredded

    2 cups kale, stemmed and shredded

    3 tablespoons fresh cilantro, chopped

    1/4 cups 100% orange juice

    1 tablespoon unseasoned rice vinegar

    2½ tablespoons white miso

    1 tablespoon ginger, finely minced

    1 clove of garlic, finely minced

    3 tablespoons dry-toasted sesame seeds

     

    Directions:

    1. - After the wild rice is cooked and cooled, add in the green onion, carrot, kale, cilantro, and set aside.
    2. - In a separate small bowl, whisk the orange juice, vinegar, miso, ginger, and garlic well until smooth.
    3. - Mix the sauce thoroughly with the rice mixture.
    4. - Garnish with sesame seeds, serve and enjoy!
